It is possible to use ITK-SNAP with an iPad and Apple Pencil. Moving the ITK-SNAP window to the iPad in Sidecar mode will allow you to trace on the image with the Apple Pencil. Simply follow the instructions here: https://support.apple.com/en-us/102597.
